Ingredients:
- 2 oz Pisco
- 1 oz fresh lime juice
- 0.7 oz simple syrup (or gum syrup)
- 1 egg white
- Ice
- A few drops of Angostura bitters (optional)

Method:
- In a shaker, combine Pisco, lime juice, simple syrup, and egg white.
- Add ice and shake vigorously for a few seconds.
- Remove the ice (for a dry shake) and shake again to emulsify the egg white.
- Strain and serve in a glass without ice.
- If desired, add a few drops of Angostura bitters on the foam.
