Pisco Sour

  • Ingredients:

    • 2 oz Pisco
    • 1 oz fresh lime juice
    • 0.7 oz simple syrup (or gum syrup)
    • 1 egg white
    • Ice
    • A few drops of Angostura bitters (optional)
  • Method:

    1. In a shaker, combine Pisco, lime juice, simple syrup, and egg white.
    2. Add ice and shake vigorously for a few seconds.
    3. Remove the ice (for a dry shake) and shake again to emulsify the egg white.
    4. Strain and serve in a glass without ice.
    5. If desired, add a few drops of Angostura bitters on the foam.
